Simple Kitchen Shares a Recipe for a Healthy and Easy Frittata!

Healthy and Easy Frittata!

8 organic eggs
½ red pepper, chopped
½ onion, chopped
1 clove garlic, chopped
1-cup spinach
½ cup raw cheddar cheese
1-2 tablespoons extra virgin olive oil or organic butter

Preheat oven to 350 degrees.

Heat a large ovenproof pan on medium, drizzle the olive oil in and add red pepper and onion.  Sauté until veggies begin to soften, add garlic and sauté another minute.  Add spinach and allow to wilt.

Spread mixture evenly in the pan and add eggs, and cheese. Do not stir! Allow to cook on medium to low heat for a few minutes until you can see the eggs starting to set.  Remove from heat and place in preheated oven for 8 minutes.  Allow to cool slightly before serving (it will be easier to cut).

Can serve as dinner with a salad and use leftovers for lunch the next day!  Cook once, eat twice!

Feel free to swap out the veggies for others that you like.  You can also add chorizo sausage or bacon.
