Dave Magrogan Talks Cocktail Tips, Vintage Food Ads and the Chester County Antiques Show

Food lovers attending the Chester County Antiques Show at The Phelps School on April 5 will be pleased to know that Doc Magrogan’s Oyster House is on the guest list as well. While the one of a kind event is set to run all weekend long—April 5, 6 & 7—Doc’s delicious cocktail and hors d’oeuvre offerings will only be available from 6 to 9 p.m. on April 5 at the Preview Party. In honor of Doc’s generous contribution to this timeless event, we decided to squeeze a few delicious facts out of CEO Dave Magrogan, including person cocktails tips. Devour the details below and, keep in mind, it’s never too early to reserve a spot at the Chester County Antiques Show.

When did Doc Magrogan’s first begin donating their services and delicious offerings to the Chester County Antiques Show? Can you explain your involvement with the prestigious affair?

DM: This will be our second full year of providing food and substantial support for the Chester County Antiques Show. We believe the Chester County Historical Society is an important organization in Chester County that preserves our history and teaches future generations about our foundation. You cannot move forward without examining your past. My home was built in 1820 and had several additions added on through 1917. I truly appreciate history in architecture and furnishings. 

       

What can guests expect to taste from Doc’s at this year’s Chester County Antiques show? 

DM: We will have about 10 varieties of freshly harvested oysters, jumbo shrimp cocktail and several appetizers. All the seafood we provide will come from sustainable and trusted sources that protect our rivers, lakes and oceans. We will pair these items with wines and beers that bring out the flavor of each item.

Doc’s is no stranger to a well-crafted cocktails or happy hour. Can you share a few pointers on how to achieve that success when creating your own gatherings at home?

DM: First, pick a signature cocktail. Lately, Bourbon drinks have been very popular. For Thanksgiving, I offered my guest a Cranberry Bourbon- Booker’s Bourbon, muddled cranberries, Agave Nectar and a splash of ginger ale. For a lighter drink, the new Sakitini at Doc’s has also been very popular, Pearl Plum vodka, plum Saki, and a splash of pineapple served as a martini. Second, pick a signature appetizer that will impress your guests and pair it with the flavors in your signature cocktail. A local cheese plate paired with wine is also a great way to start a cocktail party at home. The most important element is picking cocktails, beers, and wines that highlight the flavors of the food you are serving.

You’re at a swanky cocktail hour. What drink and bite will we see in your hand? 

DM: If it’s a cold winter night you might find me with a Bourbon based drink, currently I’m a fan of local liquors, a premium Bourbon paired with Snap Liquor (local Ginger liquor) and a dash Agave nectar is a great drink. If it’s a wine driven event I lean towards a rich Pinot Noir. If it’s a beer driven event I will tend to gravitate towards a Belgium style beer like a Chimay Red or La Fin Du Monde.

Since we’re talking antiques, let’s have some fun with “vintage” food ads/commercials. Do you have a favorite or one that’s most memorable?

DM: My favorite classic ad campaign has to be the Guinness Gilroy advertisements from the 1940’s and 50’s. It captured the entire country of Ireland and provided a wonderful variety of whimsical advertisements that Guinness still uses today. On the American side the classic Coca Cola Santa ad campaigns are timeless. They also evoke a warm holiday feeling and capture the spirit of the holidays.

Besides the drinks and oysters from Doc’s what are other aspects of the Chester County Antiques Show that guests will fall in love with?

DM: I am always impressed by the quality of the antiques on display and for sale. It is a premium show with premium offerings for discerning buyers.

Doc Magrogan’s West Chester just rolled out a new menu on February 7. Where did inspiration for the menu come from and what new items should we keep our eye on?

DM: We are very excited with the new menu coming to Doc’s West Chester. The menu has been perfected at our Philadelphia location by Executive Chef Karen Weinstein (pictured right). Chef Karen has over 20 years of experience as a Seafood chef and culinary expert. Her new menu will focus on sustainable and locally sourced products. We will be bringing in premium and fresh products not available at other Chester County restaurants like Skuna Bay Salmon, Viking Village Scallops and Oysters from around the world. 

Our new menu is lighter, healthier and more female friendly. A few menu highlights to try: Summer Lobster Rolls, Grilled Octopus Salad, Orange Sesame Shrimp, Skuna Bay Salmon, Wood Grilled Ahi Tuna, and of course our award winning Crab Cake.
