Game Day Grub: The New Seven Layer Dip

Football season is back in full swing and that means one thing in our kitchen: seven-layer dip.  It’s required dinner fare for Super Bowls and Sundays.

But I recently did something dangerous with our tradition. I went Mediterranean instead of Mexican with this sacred dip … and I scored.

My mom has been serving a version of this dip for a few years now at family gatherings and parties. Instead of setting out plain hummus, she’d spread it in a lowset bowl and garnish it with tomatoes, cucumbers, feta and/or olives … whatever she had on hand. A simple touch that elevates a classic appetizer.

The seven-layer version of this dip weaves in one more favorite Mediterranean taste—tzatziki, a Greek cucumber-yogurt sauce. These days you can buy tzatziki packaged or at your local grocery store’s prepared foods bar. (By all means, make it yourself, but this saves time.)

Not only is this fast to pull together, it’s definitely lighter than the typical Mexican version, which is loaded with sour cream, guac and cheese. Feel free to roll with whatever complementary ingredients you have on-hand. Baba ganoush, artichokes and green onions work well, too.

This dip is so easy (and delicious) you’ll want to prepare it for every kick-off or any other party. I like it so much, that, at the risk of being tackled, I just might tweak our Sunday night football tradition.

Mediterranean Seven-Layer Dip

Quantities are suggestions. Alter based upon the size of your crowd.

Ingredients:

  • 8 oz. hummus

  • 8 oz. tzatziki

  • ¾ cup cucumber, seeded and chopped

  • ¾ cup cherry tomatoes, quartered

  • 3 T red onion, finely chopped

  • 1/3 cup kalamata olives, chopped

  • 1/3 cup crumbled feta cheese

Method:

Using a glass pie plate or low-edged bowl, spread out the hummus, followed by the tzatziki. Evenly sprinkle on the chopped cucumber, followed by the tomatoes, red onion, olives, and the feta cheese. Cover and refrigerate until ready to serve. Enjoy!
