Nourish PA: Turnip & Great Northern Bean Summer Hash

Turnips offer a tasty, low carb and low calorie alternative to taters in this lovely breakfast hash. Season and sauté the turnips with creamy northern beans for an easy, healthy hash full of potassium, protein and fiber to start the day off right. This recipe is both allergen friendly and gluten free.

Add cooked and crumbled ground pork to the hash or top it with scrambled or fried eggs for additional protein.

Ingredients

  • 1 tablespoon olive oil, or vegetable oil
  • 2 turnips, finely chopped
  • 1 (15 oz.) can great northern beans, rinsed and drained
  • 1 small white onion, chopped
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Chopped fresh parsley, optional, for garnish

Method

  1. Heat oil in a large skillet over medium heat.
  2. Add turnips and onion and cook until tender, about 8-10 minutes.
  3. Add beans, paprika, garlic powder.
  4. Cook until warmed through, about 5 minutes. Garnish with parsley and serve warm.
