Pennsylvania’s signature sweet corn grows in abundance through the summer months, with anticipation mounting until local farms announce their crop is finally ready to enjoy. While it’s delicious right off the cob, we love creative culinary uses for those tender, juicy kernels.
This PA Preferred® sweet corn chili salsa will dazzle your taste buds, with the creamy crunch of corn, fresh, bright peppers and onions, verdant herbs and the zesty heat of jalapenos and chili sauce. Serve with tortilla or pita chips and tuck into this “swicy,” farm-fresh salsa to your heart’s content.

Ingredients
- 3 cups Pennsylvania corn kernels
- 1 tablespoon extra-virgin olive oil
- 1⁄2 cup finely chopped Pennsylvania red bell pepper
- 1⁄4 cup finely chopped Pennsylvania red onion
- 1 Pennsylvania jalapeno, finely chopped
- 1⁄4 cup chopped fresh cilantro
- 2 tablespoons sweet chili sauce
- 1 lime, juiced
- 1 teaspoon salt
Method
- Heat oil in a large skillet over medium-high heat. Add corn and cook until lightly charred, about 5-6 minutes. Remove from heat and transfer to a serving bowl.
- Add pepper, onion, jalapeno, cilantro, sweet chili sauce, lime juice and salt, tossing to combine and coat evenly.
- Chill until ready to serve. Garnish with additional cilantro before serving.
