Hailed as one of the nation’s top 10 races, the Philadelphia Marathon draws in thousands of visitors to the City of Brotherly Love every year. Former athlete and now Executive Chef at Square 1682, Caitlin Mateo, has rolled out a menu for the runners the night before the race to help them load up on the carbs necessary to aid their 26.1 mile challenge the next morning. “Carbing up” is a ritual that’s been practiced for over 60 years by runners who know what it takes to complete this race. On November 22, for just $35, marathon participants can savor the healthy and delicious menu she’s prepared and rest easy knowing they’ve done all the prepping they can do.
