Perfect Skinny Recipe for Poolside Summers: Drunken Watermelon Pops

Take the hard-working picnic watermelon to the next level with this boozy recipe, courtesy of La Femme Epicure Chef Sarah Simms Hendrix. They’re perfect at the pool or at a chic dinner party, too.

These summery adult treats are a fun twist to imbibe Club W’s newest wine and first rosé: 2014 Cocomero Rosato. Wine Director Kate Delaney traveled to Tuscany to work with the winemaker to create a bright, crisp and fruity offering.

Drunken Watermelon Popsicles

Ingredients:

  • 1 bottle Club W’s 2014 Cocmero Rosato rose
  • 1 large watermelon
  • 30 5-inch wooden skewers

Preparation:

  • Clean the outside of your watermelon. Dry. Cut in half lengthwise, and then cut those halves in half again. Take each quarter and slice into 1-1/2 inch thick triangular wedges.
  • Skewer each wedge from the rind toward the tip.
  • Place all the wedges in a large bowl, tip down, and pour the bottle of rose over the wedges. Let soak for 10 minutes. Work in batches until all watermelon is soaked through.
  • Remove wedges from the rose, and lay flat on a sheet tray lined with wax paper. Place a sheet of wax paper between each layer, and freeze for 24 hours before enjoying. Drunken popsicles last up to three weeks in the freezer.
