Triumphantly, the Wayne Hotel’s extensive two-year renovation project is complete, which hosted an incredible transformation of its in-house restaurant space. Now, guests are offered four concepts on the extensive first floor, with each perfected in their own style and space. Whether you want to cozy up to the Mother of Pearl-lined Bistro Bar and sip a Salted Plum cocktail (an incredible white rum concoction poured over cotton candy), score a seat peering into the open kitchen in the dining room, share a communal table over gastropub bites, or enjoy the crisp fall air on the outdoor, mocha rattan-lined veranda, Paramour serves up a space for everyone’s tastes.
However, with any new restaurant, what’s the number one question on everyone’s lips? The food! Chef Maurice Kim deRamus’ extensive menus offer everything from quick, petite bites to primal beef cuts, and we’d be amiss if we didn’t serve up our top picks.
Highlights of the Bar Menu include:
- Lola Duck Meat Balls served with Korean Hot and Sour Sauce
- Heirloom Tomato Carpaccio with Buratta, Castletrova Olives
- Pork Cheeks with creamy grits and onion jam
- Kobe Sliders with Gruyere Cheese, Truffle Aioli, Picked Shallots
- Charred Kale and Stone Fruit salad with goat cheese and honey sherry vinaigrette
- Philadelphia Pepper Pot soup with tripe, tomato relish
- Lancaster Bacon and Truffle Pea Pesto Flatbread
Highlights of the Dinner Menu include:
- Salted Cured Beef with Rosemary Oil
- Chestnut Ravioli with shredded Lola Duck, Chanterelles, Brown Butter
- Pan-roasted Wild Striped Bass with creamed corn, heirloom beans
- Paramour Street Car – mix of Maker’s Mark, Cointreau, Lazzaroni Amaretto, fresh-squeeze lemon, cherry
- Basil Gimlet – Tanqueray, fresh basil, agave nectar, fresh-squeezed lime
- Oh Henry! Martini – Absolut, Frangelico, Butterscotch Liquer, Creme de Cacao, Hershey’s Syrup, roasted peanuts, cream
Consider Paramour for your casual lunch spot, special occasion dinner, or pair the Paramour with the Wayne Hotel for your next staycation. The Wayne Hotel opened in 1906 and is listed in the National Register of Historic Places. Local entrepreneur Stephen W. Bajus purchased the property over 25 years ago and now, after a complete refurbishment, the hotel has been re-invented to offer accommodations with amenities expected by the modern traveler.

Lunch at Paramour will be served Monday through Friday, from 11:30 a.m. to 3 p.m.; dinner will be served Sunday through Thursday, from 5 to 10 p.m. and on Friday and Saturday until 11 p.m. An all-day dining menu will be available in the bistro bar, lobby lounge and on the veranda from 11:30 a.m. until midnight, seven days a week.
