Yellow Brick Road Spaghetti Squash and Emerald City Pesto
Ingredients
- 2 yellow squash
- salt and pepper
- olive oil
Directions
Preheat the oven to 450 degrees. Split the squash in half and scrape out seeds. Line an oven tray with aluminum foil. Season the spaghetti squash with olive oil, salt and pepper. Place flesh side down and roast for 30–40 minutes until fully cooked. Remove from the oven and let rest until cool enough to handle. When squash is cool enough to handle, using a large kitchen spoon scrape the strands of squash from the inside of the skin.
Emerald City Pesto
Ingredients
- 2 cups of fresh basil
- 1/8 cup toasted pine nuts
- 4 cloves of garlic
- 1–1.5 cups of olive oil
- 1 tablespoon Kosher salt
Directions
In a food processor add basil, pine nuts, garlic and salt. Pulse until items start to blend. Add olive oil slowly to create an emulsion. Feel free to add more or less olive depending on taste. More olive oil pesto will be thinner, less olive oil pesto will be thicker. Add Emerald City Pesto to the top of Yellow Brick Road Spaghetti Squash.
Wicked Witch of the Breath Garlic Bread
Ingredients
- 1 loaf Italian bread
- 1 stick of butter
- 1/8 of a cup of garlic seasoning
Directions
Preheat the oven to 450 degrees Fahrenheit. Cut loaf of bread in half. Slice butter longways and add to one piece of the bread. Sprinkle garlic seasoning evenly on top of the butter. Add the other piece of bread on top. Wrap the entire loaf in tin foil and bake in the oven for 25 minutes.
Ruby Slipper Champagne Cocktail
Add the following to a flute of champagne: 1 sugar cube, 1 teaspoon of grenadine and 1 tablespoon of ruby red grapefruit juice. Enjoy!
