On Thursday, May 19, 40 oyster farms from around the United States and an all-star lineup of New York City’s top restaurants will be joining together at Brooklyn’s Pioneer Works to celebrate the Billion Oyster Project, a nonprofit restoration and education initiative aimed at restoring one billion live oysters to New York Harbor while engaging schoolchildren through restoration-based STEM education programs.

The Billion Oyster Party, which takes place from 6–10 p.m., offers guests the opportunity to celebrate the mighty oyster through all-you-can-eat sampling while learning about additional ways to join Billion Oyster Project’s movement to restore New York Harbor. Participating oyster farms include 401 Oysters, Chelsea Farms, Cape May Salt Oysters, Hog Island Oysters and three dozen more!

In addition to an all-night shucking contest between farmers, Empire Oyster will be hosting a shuck truck, R. Murphy Knives’ shucking station will be on hand to teach guests how to shuck and which knives are best used on which oysters and oyster blogger Julie Qiu of In a Half Shell will be holding a “Shuck Me Beautiful” contest for participating growers.

Participating restaurants include Oceana, Untitled, Cull & Pistol, Brooklyn Crab, Bar Sardine and many more of the finest seafood spots in the five boroughs. Libations on hand will include those from Brooklyn Brewery, Down East Cider, New York Distilling Company, Plymouth Gin, Proud Pour Wines and more.
