Ingredients
- 1 1/2 cups shredded cheddar cheese, or other soft melting cheese
- 8 (8-inch) flour tortillas
- 2 cups canned chicken, drained and shredded
- 1 teaspoon chili powder
- 1 teaspoon garlic powder, divided
- 3/4 teaspoon salt, divided
- 1/4 teaspoon pepper
- 2 tablespoons olive oil, for brushing
- 1 cup sour cream
- 2 limes, juiced, or 2 tablespoons lime juice or lemon juice
Method
- Preheat oven to 425°F. Line a baking sheet with parchment paper. Combine chicken, mashed beans, cheese, chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt and black pepper in a medium bowl.
- Place about 1/4 cup of the filling onto each tortilla and roll tightly.
- Place taquitos, seam-side-down, on the prepared baking sheet. Brush the tops lightly with oil, and bake until golden-brown and crisp, about 18-20 minutes.
- Meanwhile, combine sour cream, lime juice, remaining garlic powder and remaining salt in a small bowl.
- Serve taquitos with sour cream mixture.
