Ingredients
- 1 (14.5 oz) can beans, such as great northern beans, black beans or kidney beans, drained
- 1 avocado peeled, pitted and chopped
- 1 large orange or small grapefruit, peeled and sectioned
- 2 cups spinach, kale or mixed greens
- ¼ teaspoon cumin powder, optional
- Chopped fresh parsley or cilantro, optional, for garnish
Method
- Combine beans, avocado, citrus, greens and cumin in a large serving bowl and toss gently to coat. Garnish with parsley.
- Chill for at least 15 minutes or until ready to serve.
