Nourish PA: Farmer’s Omelet in a Mug

Sometimes we just need a hot mug of goodness in the morning to get us going. This quick and easy omelet, made in a mug and cooked in the microwave, is a tasty, nutritious way to start your day. Combine your ingredients, sprinkle some cheese and pop it in to cook! You can take this omelet to go, or sit down and enjoy.

Add what vegetables you have on hand or your favorite pre-cooked meat like sausage crumbled or chopped bacon. 

Farmer’s Omelet in a Mug

Ingredients

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped bell peppers, any color
  • 2 tablespoons chopped tomatoes, or canned diced tomatoes, drained
  • 2 tablespoons chopped cabbage, optional
  • 1 tablespoon chopped onion
  • 2 tablespoons shredded cheddar cheese, or mozzarella

Method

  1. Coat a microwave-safe mug with cooking spray.
  2. Crack eggs into greased mug. Add salt and pepper and whisk until smooth.
  3. Add peppers, tomatoes, cabbage and onions and stir to combine.
  4. Microwave on high for 1-2 minutes, or until egg is set. Sprinkle with cheese and cook for an additional 30 seconds.
  5. Allow mug to cool slightly before serving.
