Golden Monkey Caramelized Onion Frittata with Beer-Braised Greens

The Frittata

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced, about 2 cups
  • 2 garlic cloves, sliced
  • 1 teaspoon dried thyme
  • 1 bottle Golden Monkey beer
  • 6 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste

Method

  1. Preheat the broiler on low.
  2. In a large sauté pan on medium heat, sauté onions, garlic and thyme in olive oil until they begin to brown lightly. Season the onions with salt and add the beer to the pan.
  3. Bring the beer to a simmer for about 20 minutes, until it is mostly evaporated and the onions are soft. Drain extra liquid from the onions and let them cool.
  4. Heat a non-stick pan with an oven-proof handle on medium heat. Spray well with cooking spray.
  5. In a large bowl, whisk together the eggs and milk. Season with salt and pepper. Pour the eggs into the heated pan. Add the onions to the eggs.
  6. Using a rubber spatula, move the eggs around the pan so they cook evenly. Once the eggs are three-quarters of the way cooked, remove them from the heat and sprinkle the cheese over the top.
  7. Place the pan into the preheated oven. Bake the eggs until the middle is set and the cheese is melted. Remove the pan from the oven and carefully slide the frittata out of the pan onto a serving plate or cutting board.
  8. Serve the frittata with beer-braised greens and toast.

The Greens

Serve with the Golden Monkey Caramelized Onion Frittata.

Ingredients

  • 2 tablespoons olive oil
  • 2 shallots, sliced
  • 1 bottle Golden Monkey beer
  • 1 pound kale, chopped

Method

  1. In a medium sized pot, heat olive oil on medium heat. Add the shallots to the olive oil and sauté for about 5 minutes or until they are translucent. Season with salt, add the beer to the pot and bring to a simmer.
  2. Add the kale to the simmering beer, cover and let cook for about 20 minutes, or until the kale is tender.

The Beer Butter

Serve on grilled bread for brunch with the Golden Monkey Caramelized Onion Frittata and Beer Braised Greens.

Ingredients

  • 1 stick butter, softened
  • 2 tablespoons Golden Monkey beer
  • 1 teaspoon honey
  • Salt, to taste

Method

  1. In a small bowl, mix together the butter, beer and honey. Season with a pinch of salt.
