Nourish PA: Mandarin Peanut Noodles

There’s an astounding amount of flavor packed into this simple noodle recipe that you’ll want to make again and again. These mandarin peanut noodles have the nutty, creamy flavors of peanut butter, sharp and salty notes of soy sauce and rice vinegar and the juicy pop of mandarin orange slices. It’s a filling meal for two that’s ready in just 30 minutes.

If you wish to boost the flavor and texture quotients even more, serve with additional toppings like chopped green onions, crushed peanuts or sesame seeds.

Mandarin Peanut Noodles

Ingredients

  • 2 packages instant ramen noodles, seasoning packet removed, cooked and drained according to package directions
  • 1/2 cup peanut butter, creamy or chunky
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup (optional)
  • 2 tablespoons rice vinegar or lime juice
  • 1/2 cup warm water
  • 1 can (11-oz) Mandarin orange segments, drained

Method

  1. Whisk together peanut butter, soy sauce, honey or maple syrup, if using, rice vinegar or lime juice, and warm water in a large bowl until smooth and pourable.
  2. Toss the cooked noodles with the peanut sauce until evenly coated.
  3. Gently fold in Mandarin orange segments. Refrigerate until chilled, at least 15 minutes. Divide among serving bowls and enjoy!
