Nourish PA: Microwave Bean Dip

If you want a dip that’ll make your taste buds sing, look no further. This bean dip is next level and so easy to make. Combine familiar ingredients like canned or cooked black beans, cream cheese, salsa and cheese and pop it in the microwave for a one-two punch that’ll knock out your between meal, afterschool, or late night cravings.

The only tools you need are a microwave and a fork. Prep this dip in 5 minutes and enjoy. Serve with fresh vegetables like sliced bell peppers or carrot sticks.

Microwave Bean Dip

Ingredients

  • 2 (15 ounce) can black beans, drained and rinsed, or 4 cups cooked black beans, patted dry
  • 1 (8 ounce) bar cream cheese
  • 1/2 cup jarred salsa
  • 2 teaspoons chili powder, or taco seasoning or cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese, or mozzarella
  • Chopped fresh parsley, or 1 teaspoon dried parsley or dried basil (optional)
  • Tortilla chips, for serving

Method

  1. Mash beans using a fork or potato masher in a large microwave bowl until only a few lumps remain.
  2. Add cream cheese, salsa, chili powder, salt and pepper and microwave for about 1 minute or until cream cheese is melted. Mix well, until all ingredients are evenly distributed.
  3. Sprinkle evenly with cheese and microwave until melted, about 1-2 minutes.
  4. Garnish with parsley and serve with tortilla chips.
