Nourish PA: Microwave Spiced Chickpea Snack Mix

A heart-healthy, high fiber snack mix that tastes amazing? Sign us up. Close that ordinary bag of chips and break from the norm with this mix of chickpeas, nuts, and pretzels tossed in a savory chili-garlic seasoning that’s locked in with a 5 minutes microwave zap. The result is a crunchy, nutty, chewy snack you can eat by the handful.

Substitute crackers or cereal for pretzels and nuts to make this snack mix your own. For less spice, reduce or omit the chili powder in this recipe! Store the snack mix in an airtight container at room temperature for up to one week.

Microwave Spiced Chickpea Snack Mix

  • 1 (15 ounce) can chickpeas, drained and rinsed, or 2 cups cooked chickpeas, patted dry
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup mini pretzels (optional)
  • 1 cup mixed nuts, such as almonds, cashews or peanuts


  1. Pat chickpeas dry with paper towels.
  2. Combine olive oil, cumin, garlic powder, chili powder, salt and pepper in a small bowl.
  3. Add chickpeas, pretzels and nuts to olive oil mixture and toss to coat.
  4. Working in batches, spread mixture out in a single layer onto a microwave-safe plate or dish.
  5. Microwave stirring occasionally, until chickpeas are lightly golden-brown and crisp, about 5 minutes.
  6. Allow snack mix to cool slightly before transferring to a serving bowl. Serve and enjoy!
