Nourish PA: One-Pan Potato Breakfast Hash

It’s hard to beat a good hash. It’s an easy, versatile way to cook all the good stuff. This one-pan potato hash, made with potatoes, beets and onions, gives you a golden-brown hash in under 25 minutes. 

Potatoes and beets provide all kinds of nutrients, antioxidants, fiber and complex carbohydrates for all-day energy. Top with fried eggs for a breakfast with extra protein!

One-Pan Potato Breakfast Hash

Ingredients

  • 2 tablespoons olive oil
  • 2 medium potatoes, peeled and diced into 1/2-inch cubes
  • 1 medium beet, peeled and diced into 1/2-inch cubes
  • 1 cup shredded cabbage
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes and beets and cook, stirring occasionally, until they begin to soften and brown, about 10-12 minutes.
  3. Add onions, cabbage, garlic, salt and pepper and cook until onions are tender and beginning to caramelize and are light golden-brown another 5-6 minutes. Serve warm.
