Nine years ago, Tom Baker and Peggy Zwerver set up their new spot on Germantown Avenue knowing exactly the kind of operation they were hoping to run: a sustainable restaurant and brewery. These days, Tom is still brewing his own beer and they compost all of their organics, recycle on the reg and buy all the local provisions possible.
