These Healthy Chicken Meatballs are the Cure for Weeknight Dinner Blues

Stuck in a weeknight dinner rut? It happens to the best of us. When we’re low on time and energy, it becomes all too easy to reach for pre-packaged and processed foods to help put a hot meal on the table. That’s why we love the recipes from our friends at Main Line Health. Their nutrition team understands that busy families need a handful of fail-safe, approachable recipes in their tool kits — dinner ideas that are nutritious, relatively easy to make, and that don’t call for a laundry list of ingredients that requires an extra trip to the market.

We’re especially digging this recipe for chicken meatballs with yogurt polenta (watch the video above for instruction and guidance, then click through the link for the full recipe) because it pulls together a few cool, game-changing techniques. The first is roasting grape tomatoes, which greatly deepens and enriches the flavor of even the most wan, out-of-season ‘matoes. The second is making an ultra-creamy polenta, not with entire sticks of butter and a ton of heavy cream, but instead with protein-rich, non-fat Greek yogurt. These two methods alone make it worth trying this recipe. But then, there are the tender, juicy chicken meatballs with spinach and just a pinch of Parmesan to top it all off. Enjoy!
