Nourish PA: Lentil Peanut Noodles

This flavor-packed vegetarian meal is ready to rock in just 15 minutes. Peanuts and noodles harmonize with lentils and soy sauce for a “meaty” meal full of  protein, iron and fiber. It’s easy to customize this dish with whatever pasta you have on hand. Simple + satisfying makes for a great recipe to keep in regular rotation!

Lentil Peanut Noodles

Ingredients

  • 8-ounces dry pasta or noodles, such as spaghetti, penne, rotini or ramen
  • 1 (15-ounce) can cooked lentils, drained and rinsed, or 1 1/2 cups cooked lentils, patted dry
  • 3 tablespoons peanut butter, smooth or crunchy
  • 2 tablespoons soy sauce (optional)
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)

Method

  1. In a large pot of well-salted water, cook pasta according to package directions, about 8-10 minutes. Drain and return to pot, reserving about 1 cup of cooking liquid.
  2. Add lentils to the pot, along with peanut butter, soy sauce (if using) and about 1/4 cup of reserved cooking liquid.
  3. Stir to combine until peanut butter is melted and coats pasta evenly, adding more water, as needed, to reach desired sauce consistency.
  4. Add salt, to taste, and garnish with parsley (if using). Serve warm.
