Ingredients
- 8-ounces dry pasta or noodles, such as spaghetti, penne, rotini or ramen
- 1 (15-ounce) can cooked lentils, drained and rinsed, or 1 1/2 cups cooked lentils, patted dry
- 3 tablespoons peanut butter, smooth or crunchy
- 2 tablespoons soy sauce (optional)
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)
Method
- In a large pot of well-salted water, cook pasta according to package directions, about 8-10 minutes. Drain and return to pot, reserving about 1 cup of cooking liquid.
- Add lentils to the pot, along with peanut butter, soy sauce (if using) and about 1/4 cup of reserved cooking liquid.
- Stir to combine until peanut butter is melted and coats pasta evenly, adding more water, as needed, to reach desired sauce consistency.
- Add salt, to taste, and garnish with parsley (if using). Serve warm.
