Nourish PA: Garlic and Lemon Lentil Dip

Mash, mix and serve. It’s that easy! This Nourish PA recipe uses lentils as that base with garlic and lemon juice for earthy, tangy flavors. It’s a three step, 10-minute snack you can whip up anytime.

You can serve this as a dip with assorted crackers, pretzels or veggies or use it as a spread on sandwiches and wraps.

Garlic and Lemon Lentil Dip

Ingredients

  • 1 (15-ounce) can cooked lentils, drained and rinsed, or 1 1/2 cups cooked lentils, patted dry
  • 1-2 cloves garlic, chopped, or 1/2 teaspoon garlic powder
  • 2-3 tablespoons lemon juice
  • 2-3 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)

Method

  1. Mash lentils in a bowl, using a fork or potato masher, until mostly smooth.
  2. Add garlic and lemon juice, and mix to combine.
  3. Add salt and pepper, to taste. Garnish with parsley (if using) and serve.
