Nourish PA: Cauliflower Cheese Mash

Move over, mashed potatoes. This cauliflower mash is an equally rich and creamy dish, but lighter and healthier. The cauliflower steams easily in the microwave and combines with creamy soup and cheese for just 10 minutes of preparation. Pop it in the oven and bake until it’s golden and bubbly.

Add a pop of green by garnishing with fresh herbs like chives, parsley, rosemary or thyme to serve at a gathering.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1 can (10.5-oz) cream of chicken soup
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup sour cream or heavy cream (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

  1. Preheat the oven to 400°F and lightly grease a baking dish with cooking spray.
  2. Place cauliflower florets in a large microwave-safe bowl with 2 tablespoons of water. Cover with a microwave-safe lid or plate and microwave on high until very tender, about 8 minutes. Drain any excess water.
  3. Mash the cauliflower until mostly smooth. Stir in cream of chicken soup, 3/4 cup of the cheese, and sour cream or heavy cream, if using. Season with salt and pepper, and mix to combine.
  4. Transfer mixture to the prepared baking dish and top with the remaining cheese.
  5. Bake until the top is melted and golden-brown, about 20-25 minutes. Serve warm.
