If there was ever a “best” way to use up ripe bananas, this might be it! These Nourish PA fritters are a delightful fried snack or dessert – gently sweet, lightly fried and dusted with a touch of sugar.
We suggest serving them with a drizzle of honey or maple syrup for complimenting natural sweetness.

Ingredients
- 2 ripe bananas, mashed
- 1/2 cup all-purpose flour, or whole wheat flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- Oil or butter, for frying
- Powdered sugar, for dusting (optional)
Method
- Mash the bananas in a medium bowl using a fork or potato masher until mostly smooth.
- Add flour, sugar, cinnamon (if using) and salt until you have a thick batter.
- Heat a thin layer of oil or butter in a skillet over medium heat.
- Drop spoonfuls of the batter into the pan and flatten slightly with the back of the spoon.
- Cook until golden-brown and crisp, about 2-3 minutes per side.
- Transfer to a paper-towel-lined plate to drain. Garnish with a dusting of powdered sugar and serve.
