Nourish PA: Mandarin Yogurt Muffins

Let these sunny little muffins brighten your morning! Canned or fresh mandarin oranges add a fresh, citrusy pop while yogurt creates a smooth and moist texture. These muffins are simple to make in batches and grab later for an easy breakfast or midday pick-me-up. Besides tasting wonderful, mandarin oranges are full of vitamin C, fiber and antioxidants for an overall wellness boost!

To sweeten these further, drizzle a simple glaze of powdered sugar and water or milk over the tops of the muffins.

Mandarin Yogurt Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1/3 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Mandarin orange segments, drained

Method

  1. Preheat oven to 375°F and line a 12-cup muffin tin with paper liners, or grease lightly with cooking spray.
  2. Whisk together flour, sugar, baking powder and salt in a large bowl.
  3. Combine the yogurt, oil, eggs and vanilla extract until smooth, in a separate small bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Gently fold in Mandarin segments.
  5. Spoon batter evenly into the prepared muffin cups, filling each about ¾-full.
  6. Bake until a toothpick inserted into the center comes out clean, about 18-22 minutes.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
