Cool off on a hot summer day with this honey-sweet peach granita that’s a breeze to make and ready to freeze in just 10 minutes. Granita is an ancient Sicilian dessert that resembles modern day water ice. This one uses thawed peaches and fruit juice (or water) for ease and transforms with some hourly scraping into a flaky, crystalline delight.

Ingredients
- 1 pound frozen sliced peaches, thawed
- 1/2 cup water, grapefruit juice or orange juice
- 3 tablespoons honey
- 1/2 teaspoons lemon juice or lime juice (optional)
Method
- Mash peaches in a 9×13-inch baking dish until very finely broken down and mostly smooth. Add water and honey, and mix to combine. Freeze for 1 hour.
- Rake peach mixture with a fork and return to freezer. Repeat process every hour, until peach mixture is flaky, about 4 hours. Store covered in freezer until ready to serve, raking with fork before serving.
- Divide granita between glasses. Serve and enjoy.
