Case in point: these buffalo okra lettuce wraps, which use fresh, sautéed okra as the “meat,” spicy buffalo sauce and a drizzle of creamy ranch dressing combined into one zesty little sandwich.
You can use premade buffalo sauce for ease, or make it for yourself! Simply mix 3 tablespoons of red pepper hot sauce, and 1 tablespoon of melted unsalted butter in a small bowl until combined.

Buffalo Ranch Okra Lettuce Wraps

Ingredients
- 2 teaspoons olive oil
- 1 pound fresh okra, stemmed and halved lengthwise
- 1/4 cup buffalo sauce
- 1 head bibb lettuce, loose leaf lettuce or romaine lettuce, leaves separated
- 3 tablespoons ranch dressing or blue cheese dressing
Method
- Heat oil in a large skillet over medium-high heat. Add okra, cut-side-down, and cook for 2 minutes. Reduce heat to medium and continue to cook for 3-4 minutes, until golden-brown. Turn okra over and cook until tender, about 2 minutes.
- Remove pan from heat. Stir in buffalo sauce until okra is coated.
- Divide okra between lettuce leaves. Drizzle with ranch dressing, and enjoy.
