PA Preferred® Maple Glazed Pork with Stone Fruit

Fresh thyme, Dijon mustard and pure PA maple syrup blend for a tantalizing glaze that fuses the meat and wedged fruit into one delectable meal.

Ingredients

  • 4 Pennsylvania bone-in pork chops, about 1-inch thick
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons Pennsylvania pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 3 ripe Pennsylvania peaches, plums, or nectarines, sliced into wedges

Method

  1. Preheat oven to 400°F. Pat pork chops dry and season both sides generously with salt, pepper, garlic powder and thyme.
  2. Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear pork chops until golden-brown on both sides, about 2-3 minutes per side. Remove from skillet and set aside.
  3. Reduce heat to medium and add butter. Once melted, add maple syrup, Dijon mustard, and lemon juice. Bring mixture to a gentle simmer and cook until slightly thickened, about 2 minutes.
  4. Add sliced stone fruit and gently toss in maple glaze. Nestle pork chops back into pan between the fruit, spooning some glaze over top.
  5. Transfer skillet to oven and roast until pork reaches an internal temperature of at least 145°F, about 10-15 minutes.
  6. Remove from oven and let rest for 5 minutes. Transfer pork chops to a serving plate and spoon fruit and glaze mixture over top. Garnish with additional thyme, and serve.
