Self-Reliant Seitan Sloppy Joes

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound Self-Reliant Seitan Ground Beefy
  • Kosher salt and black pepper, to taste
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • ¼ – ½ teaspoon cayenne pepper, to taste
  • 15 ounces tomato sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Braggs Liquid Aminos, or Worcestershire sauce or soy sauce
  • Hamburger buns, toasted, for serving

Method

  1. In a large deep skillet, heat 1 tablespoon olive oil over medium high heat. Add the onion and red pepper and season with salt and pepper. Cook for 5 minutes, until onions are translucent.
  2. Stir in the garlic and cook for 2 more minutes until fragrant.
  3. Push the veggies to one side of the skillet and add the other 1 tablespoon olive oil to the pan and then add the ground beefy seitan. Stir until seitan starts to crisp up and stick to the bottom of the pan.
  4. Stir in the tomato paste, brown sugar, smoked paprika, chili powder, and cayenne pepper. Cook for 1 minute until fragrant.
  5. Stir in the tomato sauce, apple cider vinegar, and Braggs liquid aminos. Bring to a boil and then reduce heat to low and simmer for 10 to 15 minutes, stirring often. 6. Season with salt and pepper to taste. Taste and adjust seasonings, adding brown sugar for sweetness, cayenne for heat, apple cider vinegar for tang, and Braggs liquid aminos for a deeper umami flavor.
  6. Serve on toasted buns with an optional slice of cheddar cheese, if desired.
