It’s hard to go wrong with a frittata. This protein-packed, anytime meal is a breeze to make and totally customizable. It’s a special treat for weekend brunch, a make-ahead weekday breakfast or an easy, crowd-pleasing dinner – and equally delicious when served warm or chilled.
This PA Preferred® frittata combines crispy bacon, farm-fresh spinach and tomatoes and diced yellow onion with creamy, cheesy eggs. Together in one skillet, it bakes to a beautiful golden brown that’s ready to slice and enjoy in a little over 30 minutes.

Ingredients
- 8 large Pennsylvania eggs
- 1⁄4 cup milk or cream
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 6 slices Pennsylvania bacon, chopped
- 1 small Pennsylvania yellow onion, diced
- 1 cup fresh Pennsylvania spinach, roughly chopped
- 1 cup Pennsylvania tomatoes, diced, or halved if cherry tomatoes
- 1 cup shredded Pennsylvania sharp cheddar cheese
- Chopped fresh parsley, for garnish
Method
- Preheat oven to 375°F. Combine eggs, milk, salt and pepper in a medium bowl, whisking until smooth. Set aside.
- Heat a 10-inch oven-safe skillet over medium heat. Add bacon and cook until crisp and fully browned, about 3-5 minutes. Remove from pan and transfer to a paper-towel-lined plate to drain.
- To the remaining bacon fat add onion to skillet and cook until tender, about 3-4 minutes. Add spinach and cook until wilted, about 1-2 minutes. Add tomatoes and bacon back to skillet and stir to combine.
- Pour egg mixture evenly over vegetables and sprinkle with cheese. Remove from heat and transfer skillet to oven until center is set and top is lightly golden-brown, about 13-15 minutes.
- Remove from oven and let cool for at least 10 minutes. Garnish with parsley before slicing and serving.
