Each week, Roman does a four-course dinner based on a single ingredient. This time around, the feast begins with salmon served with squash blossoms and mascarpone cheese, followed by pan-roasted salmon, charred corn, and chanterelle mushrooms. Then it’s time for olive oil poached salmon with charred scallions and zucchini. A tangy lemon custard tops off the gastronomic extravaganza. The cost is $45 per person, plus tax and gratuities. The tasting menu for Shellfish Tuesday is already set to include the following: cippollini, rouille, and crusty bread, followed by littleneck clams in white wine parsley sauce. The main course will be prawns a la planca, with creamy crab rice and espelette. The dessert, dark chocolate terrine with raspberry sauce, provides an unexpected but welcome end to the meal.
