Alright, so I’ll probably be going out for the festivities to celebrate St. Pat but in case you feel like feeling festive at home, here’s a fun spin on a classic to whip up and feel lucky.
Corned Beef & Swiss Appetizers
From Kraft Foods
1 pkg. (8 oz.) cream cheese, softened
2 tsp. dijon mustard
1/4 lb. corned beef, chopped
1/2 cup shredded swiss cheese, recommended gruyere
2 Tbsp. chopped green onion
36 slices cocktail rye bread, toasted
1. Preheat broiler.
2. Beat cream cheese and mustard in medium bowl with electric mixer on medium speed until well blended.
3. Add corned beef, cheese and onion; mix well.
4. Spread evenly onto toast slices. Place on baking sheet.
Broil 2 to 3 minutes or until lightly browned.
Makes 3 dozen appetizers.
Make-Ahead: Prepare as directed but do not broil. Place in single layer on baking sheets. Freeze 1 hour or until firm. Place in freezer-weight resealable plastic bags. Freeze up to 1 month. When ready to serve, remove from freezer and let stand at room temperature 10 minutes. Then, broil as directed.
