Victory chefs are keeping it local and herbal this summer with a hands-on approach that you are sure to appreciate. We’ll be offering the freshest flavors that Mother Nature can create as we harvest seasonal herbs from our ‘Victory Garden’ located about two miles away on the Paradise Farm Camp property. There we have converted a quarter acre to the production of quality culinary herbs that are grown pesticide and herbicide free. Also expect to see more produce featured on our menu that has been grown locally as we continue to support local producers.
Much of this energy and focus on local growing is being facilitated by Margo Bucco, one of our prep cooks who has demonstrated a long commitment to sustainable agriculture. You may have seen Margo in one of her many roles here as she was formerly a server and food runner. After some time away, herding sheep in Germany, Margo rejoined us in the kitchen and has taken a leadership role in moving more local produce, some of which we are growing, onto our menus. Looks like a green summer ahead here at Victory Brewing Company!
