Caramelized Onion & Goat Cheese Pastries
Recipe by Pamela Wanner Kucera
1 T butter
1 large yellow onion, thinly sliced
2 stems of fresh thyme leaves
1 t brown sugar
1 sheet frozen puff pastry, thawed but still cold
1. In a saute pan, melt the butter over medium heat.
2. Add onions and thyme. Cook for 15 minutes, stirring often.
3. Add the sugar to the onions and cook 10 more minutes.
4. Preheat oven to 400 degrees.
5. Lay out the pastry and cut out 9 circles about 2 1/4 inches around (I use the top of a drinking glass to do this).
6. Arrange the pastry circles on a sheet of parchment atop a cookie sheet, or simply a non-stick cookie sheet.
7. Top each cut-out with the onion mixture and then top with goat cheese.
8. Bake 20-25 minutes until golden and crisp.
I eat these for lunch with fresh strawberries and a vinaigrette salad ~ scrumptious!! Enjoy!!
