Reader’s Recipes: Lemon Basil Cookies

The Handcrafted Cookie Company in Phoenixville recently chose the winner of their first cookie recipe contest to kick off summer. From more than 17 contestants, Eric Hill’s Lemon Basil Cookies were deemed tastiest. He will receive a Handcrafted Cookie Company gift basket as well as see his cookie featured on the menu for the full season. Stay tuned for the next contest for your chance to win. Eric Hill’s Lemon Basil Cookies

2 1/2 C all-purpose flour 3/4 tsp. baking soda 1/8 tsp. salt 1 C unsalted butter, room temperature 1 3/4 C sugar 2 large eggs, room temperature Zest of 1 lemon Juice of 1 lemon 1 C chopped fresh basil, packed In a bowl, sift together flour, baking soda and salt. Set aside. In the bowl of an electric mixer beat butter, sugar and zest until smooth. Combine eggs, lemon juice and basil in a separate bowl and mix well. Add egg mixture to butter mixture and beat until incorporated. Stir in flour mixture. Refrigerate dough at least 4 hours or overnight. Preheat oven to 350 and line baking pan with parchment paper or silicone mat. Drop by rounded teaspoonfuls and bake 8-10 minutes, turning pan(s) halfway through.
