Meet Chef Lila Colello, the Pinch-Perfect Pastry Chef of Brûlée Bakery

In the summer of 2011, Chef Lila Colello launched a unique new mobile bakery that delivers innovative, delicious desserts and baked goods right to the homes of her customers! Chef Lila recently met me at a coffee shop on Lancaster Ave. to tell me about her fun and innovative business, Brulee Bakery

After working as a behavioral therapist for four years, Chef Lila re-evaluated her goals, taking stock in what she would most like to do. Baking had always been a way for her to recharge, and remained so even though it was not her focus. Growing up, her family owned a catering business and she learned to cook at a very young age. Only later in life, did she realize this was her passion!

At this point, Chef Lila started a successful personal chef business. However, when the economy initially tanked, she was given the opportunity to move her career in a different direction. It was then that she went to culinary school at New York City’s French Culinary Institute, and earned a degree in pastry arts.

Chef Lila launched Brûlée Bakery at the end of July 2011, as an online farm-to-table bakery. It is mobile in the sense that customers can order the items they would like directly from Lila, and she delivers their orders herself. She also has tables at local markets during the warmer months, where her brownies are a big hit. Lila explained that “Nutella and Peanut Butter flavors were very popular” at the farmers markets.

Brûlée Bakery has a sophisticated style that extends beyond flavored brownies. “I like to take traditional French pastry and put my own spin on the flavor profile,” says Lila of her style. As you’ll see after taking a look at her menu, she “likes to play around with savory and sweet flavors.” Lila told me about a recent creation that fits this style—saffron macaroons with pumpkin cream cheese filling.

Chef Lila is also socially responsible, calling her bakery “dessert with a conscience.” She uses all locally sourced and organic ingredients. This is unique. Lila says, “I don’t see other bakers doing this. I feel strongly about giving back to the community and supporting local farmers.” She also uses wheat flower and offers gluten free options.
