Head to The Radnor Hotel on Saturday, June 15, for an All-American Pig Roast! The mouthwatering and plentiful feast, complete with all the fixins, will take place in The Radnor’s stunning gardens and will feature a whole, Lancaster raised pig slow roasted in a traditional Cuban style roasting box and rubbed with adobo and fresh citrus juices. Complementing the pork will be an abundance of must-have accompaniments such as sweet Jersey corn, BBQ baked beans, zesty cheddar and jalapeno cornbread, an array of side salads, three mouthwatering sauces and summer desserts. “We’re going to be featuring new twists on classic backyard dishes like New School Ambrosia Salad, Cheddar and Jalapeno Cornbread and Caramel Bacon BBQ Baked Beans,” says Executive Chef Michael Luongo. “Don’t forget to try my fork tender Adobo rubbed Cuban Style Pork with house made Sweet and Spice Soda Jerk BBQ Sauce. You’re going to want the recipe, but I’ll never tell my secret ingredient.”
This rain-or-shine affair will take place from 4 to 8 p.m. and is $39 per person. Price includes the buffet, one glass of wine or two drafts of beer, tax and gratuity. Advanced reservations are recommended and can be made by calling (610) 341-3156.
