Nacho Cabra Returns to the Taste Test Restaurant Incubator in York

Nacho Cabra, an establishment which combines a nacho menu with a beer roster, is once again returning to the Taste Test Restaurant Incubator in York, a spot which allows aspiring restaurateurs to test their concept with the community. This time, Nacho Cabra’s time at Taste Test will be for a long-term trial.

On Tuesday, March 13, at 6:30 p.m., the community was invited to join Downtown Inc. officials and the Taste Test and Nacho Cabra teams for a special ribbon cutting ceremony at 105 South Duke Street. The restaurant stayed open for dinner for anyone who wanted to dig into the menu.

Nacho Cabra received a positive response during the initial two-week pop-up at Taste Test last spring and Nacho Cabra owners Scott Paules and Phil Deren hope a longer stay could mean an ultimate transition to a brick-and-mortar location.

“It’s the perfect combination. Everyone loves nachos and beer,” Paules said. “It’s a can’t-fail business plan if you ask me.”

Nacho Cabra offers an elevated nacho noshing experience. Customers will be able to build their own custom nachos, choosing from toppings such as a variety of salsas, proteins including chicken, chorizo, ground beef and black beans, as well as queso, cheddar and even a goat cheese option (“Cabra” in the restaurant name means “goat” in Spanish). The menu will also feature quesadillas, chips and queso, dessert nachos and more.

Taste Test’s bar will offer a selection of beers which pair well with nachos, and Nacho Cabra eventually aims to sell beer made with Deren’s recipes. Deren has extensive homebrewing experience.

“Whenever you can pair nachos and beer, that’s the start of something beautiful,” said Silas Chamberlin, CEO of Downtown Inc, the downtown improvement organization for York. “Taste Test has been a true catalyst for Downtown York’s culinary scene. This is more proof that Downtown York is a place where adventurous entrepreneurs can take new ideas and bring them to life. We invite the entire community to support this cool concept, and wish Nacho Cabra luck in its long-term Taste Test tryout.”

The hours of operation for Nacho Cabra are as follows: 11 a.m.–9 p.m., Sunday through Thursday, and 11 a.m.–midnight Friday and Saturday.
