Nourish PA: Blueberry Salsa

Five minutes could change your day! This quick and simple recipe remixes ordinary ingredients into something new and super tasty in a snap. While salsa typically leans on tomatoes as the base, there’s no reason that blueberries can’t step in for a turn. They’re similar in texture with a mild sweetness that plays off the sharp, spicy red onion and tart lime juice in this particular recipe.

This sweet-savory salsa makes a great dip with tortilla chips or topping served over grilled fish or chicken.

Blueberry Salsa

Ingredients

  • 1 cup fresh or frozen and thawed blueberries
  • 2 tablespoons finely chopped red onion
  • 1-2 tablespoons lime juice, or lemon juice (optional)
  • Salt, to taste
  • 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)
  • Tortilla chips, for serving (optional)

Method

  1. Combine blueberries, red onion and lime juice (if using) in a small serving bowl.
  2. Season with salt, and toss mixture to coat evenly.
  3. Garnish with parsley (if using) and serve.
