Nourish PA: Buffalo Ranch Okra Lettuce Wraps

For a lettuce wrap to really work, the middle needs to hold its own and offer a bright, flavorful contrast to the crispy green wrap. Case in point: these buffalo okra lettuce wraps, which use fresh, sautéed okra as the “meat,” spicy buffalo sauce and a drizzle of creamy ranch dressing combined into one zesty little sandwich.

You can use premade buffalo sauce for ease, or make it for yourself! Simply mix 3 tablespoons of red pepper hot sauce, and 1 tablespoon of melted unsalted butter in a small bowl until combined.

Okra is full of fiber, antioxidants and vitamins C and K for a meal that’s just as healthy as it is delicious!

Buffalo Ranch Okra Lettuce Wraps

Ingredients

  • 2 teaspoons olive oil
  • 1 pound fresh okra, stemmed and halved lengthwise
  • 1/4 cup buffalo sauce
  • 1 head bibb lettuce, loose leaf lettuce or romaine lettuce, leaves separated
  • 3 tablespoons ranch dressing or blue cheese dressing

Method

  1. Heat oil in a large skillet over medium-high heat. Add okra, cut-side-down, and cook for 2 minutes. Reduce heat to medium and continue to cook for 3-4 minutes, until golden-brown. Turn okra over and cook until tender, about 2 minutes.
  2. Remove pan from heat. Stir in buffalo sauce until okra is coated.
  3. Divide okra between lettuce leaves. Drizzle with ranch dressing, and enjoy.
