Nourish PA: One-Pan Cheesy Baked Summer Corn Dip

Set this on the table, and watch it disappear. This bubbly pan of cheesy goodness combines sharp cheese, sweet corn, cream cheese and savory seasoning with a jalapeño kick to take it over the top. The dip is ready to enjoy in just half an hour and serves up to eight people, so keep it in mind for your next summer gathering, and make a splash!

The dip is easy to customize. Add additional spices like a pinch of chili powder or smoked paprika to the corn mixture.

Ingredients

  • 2 (15-ounce) cans corn kernels, drained
  • 1 (8-ounce) block cream cheese, softened
  • 2 cups shredded cheese, like cheddar, pepper Jack or mozzarella
  • 1 teaspoon garlic powder
  • Sliced pickled or fresh jalapeños, optional, for garnish

Method

  1. Preheat oven to 375°F. Combine corn, cream cheese, cheddar cheese and garlic powder in an oven-safe baking dish or skillet.
  2. Bake until bubbly and golden-brown on top, about 15-20 minutes.
  3. Garnish with jalapeños and serve warm with tortilla chips.
