Nourish PA: Cheesy Broccoli Rice Bake

We suggest putting this dish into regular rotation. While it’s loaded with nutrients, the golden bubbly cheesiness is what really shines through. Combine cooked rice, broccoli florets and a can of soup (plus some seasoning) and pop it in the oven for a bit of magic!

Enjoy this dish as a side or add protein like shredded rotisserie chicken, chopped bacon or canned tuna, for an extra-hearty meal.

Cheesy Broccoli Rice Bake

Ingredients

  • 2 cups cooked white rice, or brown rice
  • 2 cups broccoli florets, fresh or frozen and thawed, chopped into bite-size pieces
  • 1 (10.5-ounce) can cream of mushroom or cream of chicken soup
  • 1/2 cup milk, or water
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)

Method

  1. Preheat oven to 350°F. Lightly grease a 8×8-inch square baking dish with cooking spray.
  2. Combine the cooked rice, broccoli, cream soup, milk, 1 cup cheddar cheese, garlic powder (if using), onion powder (if using), salt and pepper in a large bowl until evenly coated.
  3. Transfer mixture to the prepared baking dish in an even layer and top with remaining cheddar cheese.
  4. Bake uncovered until hot and bubbling and the cheese is melted, about 25-30 minutes.
  5. Garnish with parsley (if using) and serve.
