Ingredients
- 2 cups cooked white rice, or brown rice
- 2 cups broccoli florets, fresh or frozen and thawed, chopped into bite-size pieces
- 1 (10.5-ounce) can cream of mushroom or cream of chicken soup
- 1/2 cup milk, or water
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)
Method
- Preheat oven to 350°F. Lightly grease a 8×8-inch square baking dish with cooking spray.
- Combine the cooked rice, broccoli, cream soup, milk, 1 cup cheddar cheese, garlic powder (if using), onion powder (if using), salt and pepper in a large bowl until evenly coated.
- Transfer mixture to the prepared baking dish in an even layer and top with remaining cheddar cheese.
- Bake uncovered until hot and bubbling and the cheese is melted, about 25-30 minutes.
- Garnish with parsley (if using) and serve.
