Sometimes a trend comes around and remixes something familiar into an altogether genius reinterpretation. Such is the case with the viral chicken caesar salad pizza, a sort of inside-out and upside-down use of protein in the place of what’s usually a starchy component, and a Caesar salad entering new dimensions.
Our Nourish PA version makes it simple and accessible with just six ingredients, including canned chicken. You can use premade dressing or whip up your own. To make Caesar dressing, simply mix 2 tablespoons mayonnaise, 1 tablespoon grated
Parmesan cheese, 1/2 teaspoon lemon juice and 1/8 teaspoon pepper together in a small bowl until combined.

Chicken Crusted Caesar Salad Pizza

Ingredients
- 1 (20-ounce) can chunk chicken breasts, drained
- 3/4 cup grated Parmesan cheese, divided
- 1 large egg
- 1 teaspoon pepper
- 1 head romaine lettuce, roughly chopped
- 2 tablespoons Caesar dressing
Method
- Preheat oven to 375°F and line a rimmed baking sheet with parchment paper. In a large bowl, mix chicken, 1/2 cup Parmesan, egg and pepper until thoroughly combined, and chicken is finely shredded.
- Press chicken mixture into 1/4-inch-thick circle on prepared baking sheet. Bake until golden-brown and firm, about 35-40 minutes.
- Top chicken crust evenly with lettuce, and drizzle with Caesar dressing. Sprinkle with remaining Parmesan. Slice and serve.
