Ingredients
- 1 (15-ounce) can cooked lentils, drained and rinsed, or 1 1/2 cups cooked lentils, patted dry
- 1-2 cloves garlic, chopped, or 1/2 teaspoon garlic powder
- 2-3 tablespoons lemon juice
- 2-3 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley, or 1 teaspoon dried parsley, for garnish (optional)
Method
- Mash lentils in a bowl, using a fork or potato masher, until mostly smooth.
- Add garlic and lemon juice, and mix to combine.
- Add salt and pepper, to taste. Garnish with parsley (if using) and serve.
