Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup plain yogurt
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup Mandarin orange segments, drained
Method
- Preheat oven to 375°F and line a 12-cup muffin tin with paper liners, or grease lightly with cooking spray.
- Whisk together flour, sugar, baking powder and salt in a large bowl.
- Combine the yogurt, oil, eggs and vanilla extract until smooth, in a separate small bowl.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Gently fold in Mandarin segments.
- Spoon batter evenly into the prepared muffin cups, filling each about ¾-full.
- Bake until a toothpick inserted into the center comes out clean, about 18-22 minutes.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
