Nourish PA for Kids: Microwave Chili Nachos

Chips make for an easy snack, but they’re not particularly filling or nourishing. With this kid-friendly recipe, a few handfuls of tortilla chips are just the beginning of a delicious plate of nachos. Kids pile on cheese and canned chili, full of protein and fiber, for a complete snack that will keep them feeling satisfied for longer.

Keep it simple or throw on toppings like sour cream, green onions or jalapeños.

Microwave Chili Nachos

Ingredients

  • 4 cups tortilla chips
  • 1/2 (15-ounce) can chili, with or without beans
  • 1 cup shredded cheese, like cheddar, mozzarella, or Monterey Jack

Method

  1. Spread tortilla chips evenly over a microwave-safe plate.
  2. Dollop chili over chips and sprinkle with shredded cheese.
  3. Microwave on high for 1-2 minutes, or until the cheese is melted and chili is hot.
  4. Serve and enjoy.
