Ingredients
- 1 egg, beaten
- 1 cup cooked leftover rice
- 1/4 cup frozen peas and carrots, or other mixed vegetables
- 1/4 cup shredded rotisserie chicken, canned chicken, or chopped lunch meat
- 2 teaspoons soy sauce
Method
- Microwave beaten egg in a large microwave-safe bowl for 30 seconds. Stir, then microwave for another 15-30 seconds, or until fully scrambled. Remove from the bowl and set aside.
- Add the rice, peas and carrots, chicken, and soy sauce to the bowl, and stir to combine.
- Microwave on high for 1-2 minutes. Return eggs to bowl, stir, and continue microwaving another 30-60 seconds, until everything is heated through.
- Serve warm.
