Nourish PA for Kids: Microwave Egg Fried Rice

Kids remix leftovers into a full, filling meal with this Nourish PA for Kids recipe. Using the microwave for safe, easy cooking, scramble eggs and mix with leftover rice, vegetables, chicken and soy sauce. It’s a healthy, complete dish that kids will love filled with protein, vitamins and carbohydrates.

Garnish the rice with sesame seeds, green onions or a drizzle of sesame oil if desired!

Microwave Egg Fried Rice

Ingredients

  • 1 egg, beaten
  • 1 cup cooked leftover rice
  • 1/4 cup frozen peas and carrots, or other mixed vegetables
  • 1/4 cup shredded rotisserie chicken, canned chicken, or chopped lunch meat
  • 2 teaspoons soy sauce

Method

  1. Microwave beaten egg in a large microwave-safe bowl for 30 seconds. Stir, then microwave for another 15-30 seconds, or until fully scrambled. Remove from the bowl and set aside.
  2. Add the rice, peas and carrots, chicken, and soy sauce to the bowl, and stir to combine.
  3. Microwave on high for 1-2 minutes. Return eggs to bowl, stir, and continue microwaving another 30-60 seconds, until everything is heated through.
  4. Serve warm.
