Nourish PA: Microwave Pineapple Fried Rice

Fried rice is a ubiquitous Chinese dish that started as a use for leftovers, combining veggies and meat on hand with extra cooked rice. It’s remained a staple meal, one that’s simple and economic to make, super versatile and customizable and enjoyed by all ages.

This Nourish PA fried rice recipe is ready in under 15 minutes, and includes fruit, vegetables and protein for nourishment. The sweet-tart pineapple, savory mixed vegetables and splash of salty soy sauce all contrast beautifully in each salty-sweet bite.

If you’d like to punch it up, add a pinch of red pepper flakes or sriracha for a spicy version.

Ingredients

  • 1 large egg
  • 1 cup microwavable rice, cooked according to package instructions, or leftover cooked medium-grain or short-grain white rice, or brown rice
  • 1/2 cup canned chopped pineapple, drained
  • 1/2 cup frozen mixed vegetables, thawed
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic powder, optional

Method

  1. Beat egg in a large microwave-safe bowl. Microwave in 30-second intervals, stirring until scrambled and fully cooked, about 1 minute.
  2. Add rice, pineapple, vegetables, soy sauce and garlic powder, and toss gently to combine.
  3. Microwave for an additional 30 seconds, or until dish is heated evenly. Serve warm.
