Nourish PA for Kids: Microwave Walking Tacos

Walking tacos seem like the answer to the age old question, “Why not?” This casual fare solves a snack food craving while offering much more than the standard bag of chips. Kids will love throwing some protein and toppings on top of tortilla, corn or potato chips and taking it with them to the park, a friend’s home or their favorite comfy spot.

This recipe is designed for young chefs, with no sharp utensils or stove use, making it the ideal for kids to make after school or on a busy night. They can customize it to their liking with additional toppings like sour cream, guacamole, shredded lettuce, chopped tomatoes or black beans.

 

Microwave Walking Tacos

Ingredients

  • 1 single-serve bag of chips, like corn chips, flavored tortilla chips, or cheese puffs
  • 1/4 cup shredded rotisserie chicken, canned chicken, or chopped lunch meat
  • 1/4 cup shredded cheese, like cheddar or Monterey Jack
  • 2 tablespoons mild salsa

Method

  1. Gently crush the chips inside the sealed bag to break them into bite-sized pieces, open the bag and set aside.
  2. Place the chicken or lunch meat in a microwave-safe bowl and microwave in 30-second increments, until heated through, about 1 minute total.
  3. Transfer hot chicken to the chip bag and quickly top with shredded cheese.
  4. Dollop with salsa and serve.
