Ingredients
- 1 small bunch garlic scapes, or green onions, cut into 2-inch pieces
- 1/2 cup white vinegar, or apple cider vinegar
- 1/2 cup water
- 2 teaspoons salt
- 1/2 teaspoon red pepper flakes, optional
Method
- Pack scapes into a clean jar with a resealable lid.
- Whisk together vinegar, water, salt and red pepper flakes until salt is dissolved completely.
- Pour mixture over scapes, ensuring they are fully submerged.
- Seal jar tightly, and let sit at room temperature for at least 1 hour, or overnight.
- Enjoy as pickles, or as a topping for salads, tacos, or bowls.
